GF Pizza (Thin, Regular or Deep Dish)

GF Pizza 

A few weeks ago, my son had a sleep over with a few of his friends. So, we made pizzas! They had fun making all kinds of pizza. His friends loved the pizza so much that they had a second helping...then a third helping.... They said that they were the best pizzas ever! The best part was my son was proud to tell them that they are his gluten free pizzas! 



Pizza Dough 

2 tsp of active yeast
2 cups of warm water
4 cups of Gluten Free Flour Mix
1 tbsp of sugar
2/3 cup of oil
2 tsp of salt

Add active yeast to warm water and set aside. Mix flour, sugar, and salt. Add oil to water then mix in flour until dough forms. Set in a warm place and let rise for 1 hour.

For regular crust, half dough and roll out on parchment paper. (makes two pizzas)


For thin crust, half dough and roll out on parchment paper. Bake crust for 10 minutes at 400 before adding sauce and toppings. (makes two pizzas)

For deep dish, pat out dough in a deep dish pan to cover sides and bottom.

Add tomato sauce, your favorite toppings and cheese. Bake at 400 for 15-20 minutes until brown and bubbling.

Grandma's Chocolate Fudge Pie

When I was a little girl (ok, as a big girl too), my grandmother Blanton would make her famous Chocolate Fudge Pie. I could smell it cooking the minute I walked in her house! Mmmmmmm Mmmmmm

My son came to love this famous pie too! My grandmother taught me how to make it and it is so quick and easy. Here is my gluten free version of the delicious pie!


3 Tbsp of cocoa
1 cup of sugar
1 stick of butter
2 eggs, beaten
1/4 cup of Gluten Free Flour Mix
1 tsp of vanilla

Melt butter. Add cocoa and sugar. Then add remaining ingredients. Pour into an unbaked gluten free pie crust. Bake at 325 for 35 minutes or until pie is firm in the middle.


* I like to serve it topped with Cool-whip and chocolate syrup!



Gluten Free Pie Crust





1 1/4 cup of Gluten Free Flour Mix
1/4 cup of butter
1/4 cup of sugar
2 tbsp of cold water

Cut butter into flour and sugar. Add water and mix until it forms a dough. Press dough down into a pie plate.

Spaghetti (Vegetarian option too)


1 pound of ground meat (or two cups of chopped mushrooms)
2 onions diced
1 cup of grated cauliflower
1 cup of grated carrots
2 15oz cans of tomato sauce
2 15oz cans of water
1 tsp of chili powder
1/2 tsp garlic powder 
1/2 tsp onion powder
1/2 tsp of salt

shredded cheese - optional 

Brown meat (and/or mushrooms) along with onions cauliflower and carrots. Add rest of ingredients and simmer for at least 30 minutes on low. Serve over your favorite gluten free pasta!
