Apple Flax Cereal

I used to enjoy cereal for breakfast....and even supper sometimes. The gluten free cereals on the market are great, but I really miss my bran cereals. Not anymore....my new obsession is Apple Flax Cereal!

I confess.....I have eaten it two nights in a row for supper. Yes, I even cooked a big meal for my boys the last two nights and I still ate cereal for supper! :)

It is so easy and yummy!

Apple Flax Cereal

3/4 cup of flaxseed meal
1/4 cup of apple sauce
1 apple chopped
dash or two of cinnamon (to taste)
1/2 cup almond milk (more or less to your taste)

Place flax meal in a bowl. Add apple sauce and cinnamon and stir. Pour milk over cereal and top with chopped apples. Enjoy!

Crockpot GF Apple Pie Oatmeal

"This is the best oatmeal ever! You rock, Mom! I want more!" Those were the words from my sweet son this morning.

We woke up to the sweet smell of apples and cinnamon! Crockpot oatmeal is the way to go! Yummy!

Apple Pie Oatmeal

2 cups of gluten free oatmeal
1/2 cup of brown sugar
1 cup of apple sauce
2 diced apples
7 cups of water
1tsp of cinnamon

Add all ingredients in crockpot stir. Cook 4-5 hours on high.

It can be stored in refrigerator for up to a week and reheated in microwave for breakfast.

GF Egg Drop Soup

This week I have been sick with strep throat. :(  My son has been so sweet and thoughtful trying to take care of me as he was home too because we had a snow day.  Since I have not been able to eat anything, my son suggested I make some Feel Better Soup.  He says, " Mom, you always make it for me when I am sick and it makes me feel so much better!" So I did, but even feel better soup was too much for my sore throat to swallow.

That's when it hit me, Egg Drop Soup! It fit the bill perfectly!

Egg Drop Soup

15 oz of gf vegetable or chicken broth
2 scallions
1 tsp of olive oil
1/2 tsp of Goya Adobo seasoning
1 egg (egg white only)
1 tsp of corn starch
2 tbsp of water
Salt and pepper to taste

Slice scallions and sauté in pan with olive oil. Add  broth and Adobe seasoning bring to a boil. While broth is heating to boiling point, crack egg and separate egg white. Beat egg white then slowly pour into boiling broth while stirring. Cut heat down, mix corn starch and water and add slowly while stirring. Return soup to a boil then cut off. Add salt and pepper to your liking. Enjoy!
